In our opinion and experience, the very best way to temper your chocolate at home, or for a small farmer's market sized business like ours, is making your own cacao butter silk using a Sous Vide. We use the Anova Sous Vide for making all of our cacao butter silk for tempering and have had zero problems and have been using it regularly for over a year. All you do is simply cut up your cacao butter, put in a tightly sealed mason jar, submerge in water with a weight (rock) on top of your jar so it doesn't float, set your Sous Vide at 92.5 F and leave for 24 hours. Then you have your very own pure type five crystals for tempering your chocolate. The manual mode for this Sous Vide only adjusts in increments of .5; however, according to the manufacturer if you are using the wi-fi mode with your smart phone you can adjust by .1 because you can manual enter the exact temperature. We have never had to use anything but 92.5 F to make our cacao butter silk; however, if you do have to trouble shoot your batch by adjusting in .1 increments, you will need to use the wi-fi mode. Some customer reviews have commented on problems with the wi-fi connectivity and not liking the noise the Sous Vide makes while operating; we have never had to use the wi-fi feature and use the previous version (900 watt), but have never had any issue with noise.
