Our go-to YouTube Channel for making chocolate is John Nanci's (The Alchemist) channel called How to Make Chocolate at Home. We discovered this YouTube channel and John's website, Chocolate Alchemy, after frantically searching the internet for ways to troubleshoot our tempering issues we were having. John Nanci, has a video and instructions on his website for doing a traditional temper, which is very difficult and must be practiced over and over, and a very simple way of tempering by creating cocoa butter "silk"; which is coco butter that has been tempered and is then used to sprinkle into your melted chocolate to put it in temper. All of this and much more can be found on John's YouTube channel and website. We have since purchased several pieced of equipment from John and taken his cocoa roasting seminar in Eugene, Oregon. John is a Chemist by professional and academic background and the primary reason we have both equipment and other materials for being able to profile roast and make chocolate at home.
