This is the exact dehumidifier that we use in our home for reducing the relative humidity to a level that will not result in bloomed chocolate. Before using a dehumidifier there would be rainy days or very humid days here in Houston, TX and our chocolate would literally bloom in front of our eyes and as a chocolate maker, that is one of the most disheartening things that can go wrong during the process of making chocolate. As a chocolate maker, we are taking the chocolate from the raw bean which involves time sourcing, sorting, roasting, cracking, winnowing, grinding, tempering, and pouring molds; after all that effort, the last think you want is your chocolate to bloom. We have been using our dehumidifier for over a year with no problems with the machine and this has made it so that we can temper chocolate any time of year regardless of how rainy or humid it is outside. Not having a down day can mean the difference of having enough chocolate to go to market or not so this is one of the most important pieces of equipment we own. One thing to note with this machine, is that producing heat is part of how it removes humidity from the air, so your air conditioner may be working a little harder during the summer while in use. There are three models of this dehumidifier that they offer; 1,500 Sq. Ft., 3,000 Sq. Ft., and 4,500 Sq. Ft. We use the 1,500 Sq. Ft. model and it takes about 30 minutes in the winter to get our indoor humidity down to an acceptable level and about an hour to hour and a half in the summer. This machine will display the relative humidity in the room on its display but we recommend also buying a Hygrometer & Indoor Thermometer to put in the kitchen or other area you make chocolate; the Hygrometer is only about $10 and shows humidity and temperature and is very small and light.
